2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

Zest of 2 lemons

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

½ teaspoon salt

1 ½ cups powdered sugar (for glaze)

3 tablespoons fresh lemon juice (for glaze)

Lemon zest for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.

          Gradually add the flour mixture to the wet ingredients, mixing until just combined. Do not overmix.

            Scoop tablespoon-sized balls of dough and roll them in sugar before placing them onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers are still soft.

                Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

                  To prepare the glaze, whisk together the powdered sugar and fresh lemon juice in a small bowl until smooth. If it's too thick, add more lemon juice a teaspoon at a time until desired consistency is reached.

                    Once the cookies are completely cool, drizzle the lemon glaze over the top and sprinkle with additional lemon zest for garnish.
