1 pound chicken breast, diced

1 cup gnocchi (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

2 tablespoons all-purpose flour

Salt and pepper to taste

1 sheet puff pastry (thawed)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

      Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender. Stir in the minced garlic and cook for an additional 1 minute.

        Make the Sauce: Sprinkle the flour over the vegetables and stir well to coat. Gradually pour in the chicken broth while stirring to prevent lumps. Bring the mixture to a simmer and let it thicken, about 5 minutes.

          Add the Remaining Ingredients: Stir in the heavy cream, cooked chicken, gnocchi, frozen peas, thyme, rosemary, salt, and pepper. Mix well and let it simmer for another 2-3 minutes, allowing the gnocchi to soften slightly.

            Transfer to Baking Dish: Pour the mixture into a large baking dish.

              Top with Puff Pastry: Roll out the puff pastry on a floured surface and place it over the top of the filling. Trim any excess pastry, then seal the edges by pressing down with a fork. Cut a few slits in the pastry to allow steam to escape.

                Brush with Egg Wash: In a small bowl, beat the egg and brush it over the puff pastry for a golden finish.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the pastry is puffed and golden brown.
