Ingredients

24 Golden Oreo cookies, crushed

1/4 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, hulled and sliced

1/2 cup sour cream

1/4 cup powdered sugar

Extra Golden Oreos for topping (optional)

Instructions

Preheat the oven to 325°F (163°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Prepare the crust: In a medium bowl, combine the crushed Golden Oreos and melted butter. Stir until the crumbs are fully coated. Press the mixture firmly into the bottom of the lined baking dish to form an even layer.

Bake the crust: Place the dish in the preheated oven and bake for 10 minutes. Remove and let it cool slightly while you prepare the filling.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add sugar and vanilla: Gradually add the granulated sugar and vanilla extract to the cream cheese, beating until well combined.

Incorporate the eggs: Add the eggs, one at a time, mixing until just combined after each addition. Be careful not to overmix.

Combine with sour cream: Gently fold in the sour cream until the mixture is smooth.

Add strawberries: Stir in the sliced strawberries until evenly distributed throughout the cheesecake batter.

Pour and bake: Pour the cheesecake filling over the cooled cookie crust and spread it evenly. Bake in the oven for 30-35 minutes, or until the center is just set but still slightly jiggly.

Cool and chill: Remove the cheesecake from the oven and allow it to cool at room temperature for about an hour. Once cooled, cover and refrigerate for at least 3 hours or overnight for best texture.

Prepare for serving: Once chilled, remove the cheesecake from the baking dish using the parchment overhang. Dust the top with powdered sugar and optionally crush some extra Golden Oreos for garnish.

Slice and serve: Cut into bars and serve cold. Enjoy your delicious Golden Oreo Strawberry Cheesecake Bars!
