500g beef fillet, sliced into thin strips

2 tablespoons olive oil

1 tablespoon unsalted butter

1 onion, finely chopped

2 cloves garlic, minced

250g mushrooms, sliced (preferably button or cremini)

1 tablespoon Dijon mustard

200ml beef broth

150ml sour cream

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

300g egg noodles or rice, cooked (for serving)

Instructions
 

Prepare the Ingredients: Begin by slicing the beef fillet into thin strips against the grain. This will ensure it’s tender once cooked. Finely chop the onion and mince the garlic. Slice the mushrooms and set aside.

    Cook the Beef: Heat 1 tablespoon of olive oil and the butter in a large frying pan over medium-high heat. Once hot, add the beef strips and sear for about 2-3 minutes until browned but still slightly rare. Remove the beef from the pan and set aside on a plate.

      Sauté the Vegetables: In the same pan, add the remaining olive oil. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are browned and tender.

        Create the Sauce: Stir in the Dijon mustard, followed by the beef broth and Worcestershire sauce. Bring the mixture to a simmer and let it cook for about 5 minutes to reduce slightly.

          Finish with Sour Cream: Lower the heat and stir in the sour cream, mixing well to create a creamy sauce. Add the cooked beef back into the pan, season with salt and pepper, and gently heat through for 2 minutes without boiling.

            Serve: Serve the beef stroganoff over cooked egg noodles or rice. Garnish with freshly chopped parsley for a pop of color and flavor.
