Ingredients

4 slices of artisanal bread (e.g., sourdough or ciabatta)

6 oz Gouda cheese, grated

1 cup fresh mushrooms (such as cremini or shiitake), sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional: 1 tablespoon balsamic glaze for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) for roasting the mushrooms and onions.

Prepare the Vegetables: In a baking dish, combine the sliced mushrooms and onions. Drizzle with 1 tablespoon of olive oil, season with salt, pepper, and thyme. Toss to coat the vegetables evenly.

Roast the Mixture: Spread the veggies in an even layer and roast in the oven for 20-25 minutes, or until they are golden brown and tender. Stir halfway through for even cooking.

Assemble the Sandwich: While the vegetables are roasting, butter one side of each slice of bread with unsalted butter; this will be the exterior of the grilled cheese. On the unbuttered side, layer the grated Gouda cheese generously. Add a portion of the roasted mushroom and onion mixture on top of the cheese, followed by another layer of Gouda. Top with a second slice of bread, buttered side facing out.

Cook the Sandwich: Heat a skillet over medium heat. Carefully place the sandwich in the skillet and cook for 3-5 minutes on each side or until the bread is golden and crispy, and the cheese is melted.

Serve: Once cooked, remove from the skillet. Cut the sandwich diagonally and drizzle with balsamic glaze if desired for an extra flavor kick.

              - Presentation Tips: Serve the sandwich on a rustic wooden board or a plate with a small side salad or potato chips for crunch. Garnish with a sprig of thyme for an elegant touch.
