6 oz Gouda cheese, grated

1 cup fresh mushrooms (such as cremini or shiitake), sliced

1 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional: 1 tablespoon balsamic glaze for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C) for roasting the mushrooms and onions.
