4 boneless, skinless chicken thighs

2 cups cherry tomatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium red onion, sliced

1 lemon (zested and juiced)

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a large bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper to create a marinade.

      Marinate the Chicken: Add the chicken thighs to the bowl and toss to coat well in the marinade. Allow it to marinate for at least 15 minutes at room temperature while you prepare the vegetables.

        Prepare the Vegetables: On a large sheet pan, add the cherry tomatoes, red bell pepper, yellow bell pepper, and red onion. Drizzle with a bit of olive oil, salt, and pepper, and toss to combine.

          Add Chicken: Place the marinated chicken thighs on the sheet pan among the vegetables. Pour any remaining marinade over the chicken.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the vegetables are tender and caramelized.

              Add Olives and Feta: In the last 5 minutes of cooking, sprinkle the Kalamata olives and crumbled feta cheese over the chicken and vegetables, allowing it to soften slightly in the heat.

                Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve warm. Enjoy with pita bread or over rice if desired.
