Greek Quinoa Chopped Salad

1 cup quinoa, rinsed and drained

2 cups water or vegetable broth

1 cucumber, diced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint leaves, chopped

Juice of 2 lemons

3 tablespoons olive oil

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.

    In a large bowl, combine the diced cucumber, halved cherry tomatoes, diced bell pepper, chopped red onion, sliced olives, crumbled feta cheese, chopped parsley, and chopped mint.

      In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.

        Once the quinoa has cooled, add it to the large bowl with the chopped vegetables and herbs.

          Drizzle the lemon-olive oil dressing over the salad and toss gently until everything is mixed well.

            Adjust seasoning with additional salt and pepper if needed, and serve chilled or at room temperature.
