1 lb pizza dough (store-bought or homemade)

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

4 cloves garlic, roasted and mashed

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C) if using a pizza stone, or 450°F (232°C) for a baking sheet.

    Prepare the Garlic: If you haven't done so already, roast the garlic. Remove the skins from the garlic cloves, drizzle with olive oil, wrap them in aluminum foil, and roast for about 30 minutes until soft and caramelized. Squeeze the garlic out of the skins and mash it into a paste.

      Prepare the Dough: On a lightly floured surface, roll out the pizza dough to your desired thickness. For a thin crust, aim for about 1/4-inch thick. Transfer the rolled dough to a pizza peel or a baking sheet lined with parchment paper.

        Assemble the Base: Spread the mashed roasted garlic evenly over the rolled out dough, leaving a small border around the edges. Drizzle a little olive oil over the garlic spread for added flavor.

          Add Cheese and Spinach: In a bowl, mix the ricotta, mozzarella, and crumbled feta cheese together. Season with salt, pepper, oregano, and red pepper flakes (if using). Spread the cheese mixture over the garlic base evenly, then sprinkle the chopped spinach on top.

            Bake the Pizza: Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.

              Garnish and Serve: Once out of the oven, let the pizza cool for a few minutes. Drizzle with a bit of olive oil, add fresh basil leaves for garnish, and cut into slices. Serve warm and enjoy!
