1 can (15 oz) chickpeas, drained and rinsed

2 medium cucumbers, diced

1 pint cherry tomatoes, halved

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted

1 block (8 oz) feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar (or substitute with lemon juice)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish

In a large salad bowl, combine the drained chickpeas, diced cucumbers, halved cherry tomatoes, diced red bell pepper, chopped red onion, and Kalamata olives.

    Gently fold in the crumbled feta cheese, taking care to keep some larger chunks for a varied texture.
