4 medium-sized green apples, peeled and chopped

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Instructions
 

Begin by washing, peeling, and chopping the green apples into small pieces, discarding the cores.

    In a medium saucepan, combine the chopped apples, sugar, and water. Stir gently to combine.

      Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 20 minutes. Stir occasionally to prevent sticking.

        Once the apples are soft and the mixture has thickened, remove the saucepan from heat.

          Use a fine mesh strainer or cheesecloth to strain the mixture, pressing down on the solids to extract maximum liquid. Discard the apple solids.

            Pour the strained liquid back into the saucepan and add the lemon juice, vanilla extract, and ground cinnamon.

              Cook the syrup on low heat for an additional 10 minutes, allowing the flavors to meld together.

                Remove from heat and let it cool to room temperature before transferring to a clean, airtight container.
