4 slices of sourdough bread

4 oz Gouda cheese, sliced

1 cup mushrooms, sliced (preferably a mix of shiitake, cremini, and button)

1 medium onion, thinly sliced

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Prepare the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 10-12 minutes. Stir occasionally to prevent burning. Remove the onions from the skillet and set aside.

    Cook the Mushrooms: In the same skillet, add another tablespoon of olive oil along with the sliced mushrooms, thyme, salt, and pepper. Sauté the mushrooms until they are softened and browned, about 5-7 minutes. Remove from heat and combine with the caramelized onions.

      Assemble the Sandwich: Lay two slices of sourdough bread on a flat surface. Layer half of the Gouda cheese on each slice. Top one slice with the mushroom and onion mixture, then place the remaining Gouda on top. Finish by placing the second slice of bread on top to create a sandwich.

        Grill the Sandwich: In the same skillet, add butter over medium heat. Once melted, place the sandwich in the skillet. Grill for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and grill the other side for an additional 3-4 minutes, pressing down slightly to ensure even browning.

          Serve: Once both sides are golden and the cheese is melted, remove the sandwich from the skillet. Let it cool for a minute, then slice in half to reveal the gooey goodness inside.
