1.5 pounds flank steak

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 large tomatoes, diced

1 yellow bell pepper, diced

1 red onion, finely chopped

1 jalapeño, seeded and minced

1 lime, juiced

Fresh cilantro, chopped for garnish

Marinate the Steak: In a bowl, combine olive oil, minced garlic, smoked paprika, salt, and black pepper. Rub the mixture all over the flank steak, ensuring it's well coated. Let the steak marinate at room temperature for 30 minutes or refrigerate for up to 2 hours for deeper flavor.

    Prepare the Salsa: While the steak is marinating, in a separate bowl, mix diced tomatoes, yellow bell pepper, red onion, jalapeño, lime juice, and a pinch of salt. Stir well and let the salsa sit for 15 minutes to allow the flavors to meld.

      Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C).

        Grill the Steak: Remove the flank steak from the marinade and place it on the grill. Cook for about 5-7 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer for precise cooking (130°F for medium-rare).

          Rest the Steak: Once done, remove the steak from the grill and let it rest for 10 minutes. This allows the juices to redistribute.
