1 lb salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into half-moons

Skewers (soaked in water for 30 minutes if wooden)

Creamy Dill Yogurt Sauce:

1 cup plain Greek yogurt

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon zest

1 tablespoon fresh lemon juice

1 small garlic clove, minced

Salt, to taste

Marinate the Salmon: In a medium bowl, mix together the olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Add the salmon cubes to the marinade, tossing to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Yogurt Sauce: While the salmon marinates, prepare the creamy dill yogurt sauce. In a small bowl, combine the Greek yogurt, dill, lemon zest, lemon juice, minced garlic, and salt. Mix well until smooth. Adjust seasoning to taste and set aside in the refrigerator.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated salmon cubes onto skewers, alternating with pieces of red bell pepper and zucchini for a colorful presentation.

        Grill the Skewers: Once the grill is hot, place the skewers on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks. The salmon should be opaque and flake easily with a fork.

          Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve the grilled salmon skewers with the creamy dill yogurt sauce on the side for dipping. Garnish with extra dill if desired.
