1 pound ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

2 tablespoons olive oil

Salt and pepper to taste

8 ounces egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5 minutes. Season with salt and pepper. Remove the browned beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onions and garlic. Sauté for about 2 minutes, until the onions are translucent. Add the sliced mushrooms and cook for an additional 5 minutes, or until they are tender and slightly browned.

        Create the Sauce: Sprinkle the flour over the mushroom mixture and stir well, cooking for about a minute to get rid of the raw flour taste. Slowly pour in the beef broth, whisking continuously to prevent lumps. Stir in the Worcestershire sauce and Dijon mustard. Let the mixture simmer for about 3-4 minutes until it thickens slightly.

          Combine Ingredients: Reduce the heat to low and add the sour cream to the skillet, stirring until fully combined. Return the browned ground beef to the skillet and mix well to coat it in the creamy sauce. Simmer for an additional 2 minutes to heat everything through.

            Serve: Toss the cooked egg noodles in the Stroganoff sauce until well combined. Serve hot, garnished with fresh parsley for a pop of color and flavor.
