1 lb ground turkey

2 tablespoons olive oil

1 bell pepper (sliced, any color)

1 cup broccoli florets

1 medium carrot (julienned)

1 cup snap peas

3 green onions (chopped)

2 cloves garlic (minced)

1 tablespoon ginger (minced)

Salt and pepper (to taste)

1/4 cup soy sauce (low sodium)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prep the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

    Cook the Turkey: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the ground turkey, breaking it apart with a spatula. Season with salt and pepper, and cook until browned and fully cooked, about 5-7 minutes. Remove the turkey from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the bell pepper, broccoli, carrot, and snap peas. Stir-fry for about 4-5 minutes, or until the vegetables are bright and slightly tender but still crisp.

        Combine Everything: Return the cooked ground turkey to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to heat through and coat the turkey and vegetables evenly.

          Serve: Remove from heat and stir in chopped green onions. Serve the stir-fry over cooked rice or quinoa. Garnish with sesame seeds for added texture.
