1 package (17.3 ounces) of frozen puff pastry, thawed

8 ounces sliced ham

8 ounces sliced cheese (Swiss or Gruyere work well)

1 egg, beaten (for egg wash)

2 tablespoons Dijon mustard

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Sesame seeds (optional, for topping)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the thawed puff pastry to smooth any creases. Cut the pastry into 6 equal squares (approximately 5x5 inches).

      In the center of each pastry square, spread a thin layer of Dijon mustard.

        Layer a few slices of ham on top of the mustard, followed by a slice of cheese. Sprinkle with fresh thyme, salt, and pepper.

          Fold the corners of each square over the filling to create an envelope shape, pinching the edges to seal well.
