Ingredients
  

2 slices of thick-cut sourdough bread

2 large eggs

4 oz sliced deli ham (preferably honey or smoked)

2 slices of sharp cheddar cheese

1 tbsp unsalted butter

1 tbsp mayonnaise

1 tsp Dijon mustard

Salt and pepper, to taste

Optional: Fresh arugula or spinach for a peppery bite

Instructions
 

Prepare the Sauce: In a small bowl, mix together the mayonnaise and Dijon mustard. Set aside.

    Toast the Bread: Heat a skillet over medium heat and lightly toast the sourdough bread on one side for about 2-3 minutes, until golden brown. Set aside.

      Cook the Ham: In the same skillet, add the slices of ham and cook for about 1-2 minutes per side until warmed through and slightly caramelized. Remove and set aside.

        Fry the Eggs: Add the butter to the skillet. Once melted and sizzling, crack the eggs into the skillet. Cook for about 2-3 minutes until the whites are firm but the yolks are still runny for a sunny-side-up effect. Season with salt and pepper.

          Assemble the Sandwich: On one slice of the toasted sourdough, spread the mayo-Dijon mix. Layer the cooked ham, followed by the crispy fried egg, and then place a slice of cheddar cheese on top.

            Melt the Cheese: Place the sandwich (open-faced) back into the skillet over low heat and cover with a lid for 1-2 minutes until the cheese begins to melt.

              Finish: If desired, add some fresh arugula or spinach on top of the cheese before closing the sandwich with the second slice of toasted bread. Press down gently.

                Serve: Cut the sandwich in half for easier handling and enjoy your delicious, homemade ham, egg, and cheese breakfast sandwich!
