1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup almond milk (or any milk of your choice)

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (preferably 70% cacao or more)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease with cooking spray.

    In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt until well combined.

      In a separate bowl, mix together the honey (or maple syrup), applesauce, almond milk, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix—the batter should be slightly lumpy.

          Fold in the dark chocolate chips and optional chopped nuts until evenly distributed.

            Spoon the muffin batter into the prepared mini muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
