1 cup Medjool dates, pitted

1/2 cup natural peanut butter (or almond butter)

1/4 cup unsweetened cocoa powder

1/2 cup roasted unsalted peanuts, roughly chopped

1/4 cup dark chocolate chips (dairy-free if desired)

1 tbsp coconut oil

Sea salt, to taste

1/2 tsp vanilla extract

Prepare the Date Mixture: In a food processor, combine pitted Medjool dates and cocoa powder. Blend until the mixture becomes smooth and forms a dough-like consistency. If necessary, add a tablespoon of water to help it blend.

    Shape the Base: Line a small baking dish (about 8x8 inches) with parchment paper. Press the date mixture evenly into the bottom of the dish to form a base layer. Smooth out the surface with the back of a spatula.

      Spread the Peanut Butter: Evenly spread the natural peanut butter over the date base. Ensure it covers every inch for that creamy texture throughout.

        Add the Peanuts: Sprinkle the chopped roasted peanuts over the peanut butter layer, pressing them down slightly to help them adhere.

          Make the Chocolate Topping: In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second increments, stirring in between, until melted and smooth.
