1 pound lean beef sirloin, thinly sliced against the grain

2 cups broccoli florets (fresh or frozen)

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon ginger, minced

¼ cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon sesame oil

Cooked brown rice or quinoa, for serving

Sesame seeds and green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef with half of the soy sauce, honey/maple syrup, minced garlic, minced ginger, and sesame oil. Let it marinate for at least 15 minutes (or up to 1 hour in the refrigerator).

    Prepare the Broccoli: If using fresh broccoli, steam or blanch it for 3-4 minutes until vibrant green and tender-crisp. If using frozen, simply microwave or steam according to package instructions.

      Cook the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the marinated beef in a single layer. Cook for about 3-4 minutes, or until browned, stirring occasionally to cook evenly. Remove the beef from the skillet and set it aside.

        Combine Ingredients: In the same skillet, add the broccoli. Stir-fry for 2-3 minutes, then return the cooked beef to the skillet.

          Thicken the Sauce: In a small bowl, mix the cornstarch and water to create a slurry. Pour the remaining soy sauce into the skillet, then add the cornstarch slurry. Stir everything well and cook for an additional 2-3 minutes until the sauce thickens and coats the beef and broccoli.

            Serve: Serve the beef and broccoli hot over a bed of brown rice or quinoa. Garnish with sesame seeds and sliced green onions.
