Ingredients
  

2 medium sweet potatoes, peeled and cubed

3 medium carrots, peeled and chopped

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 cup low-fat Greek yogurt (or plant-based yogurt)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by bringing a large pot of salted water to a boil. Add the cubed sweet potatoes and chopped carrots.

    Cook for about 15-20 minutes, or until both the sweet potatoes and carrots are tender when pierced with a fork.

      Drain the vegetables and return them to the pot.

        Add the olive oil, ground cinnamon, nutmeg, and Greek yogurt to the pot.

          Using a potato masher or immersion blender, mash the sweet potatoes and carrots together until you achieve a creamy consistency.

            Season with salt and pepper to taste. Mix well to combine.

              Transfer the mash to a serving bowl and sprinkle with fresh parsley for garnish before serving.
