1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or navy), rinsed and drained

1 can (4 oz) diced green chilies

1 cup corn (fresh, frozen, or canned)

2 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil

Fresh cilantro for garnish

1 lime, cut into wedges (for serving)

Optional toppings: avocado, sour cream, shredded cheese, jalapeños

Sauté the Base: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Cook the Turkey: Add the ground turkey to the pot. Cook, breaking it up with a spoon, until it's browned and fully cooked, about 6-8 minutes. Drain any excess fat if necessary.

      Combine Ingredients: Stir in the green chilies, corn, rinsed white beans, chicken broth, cumin, smoked paprika, chili powder, and season with salt and pepper. Bring the mixture to a gentle boil.

        Simmer: Reduce the heat to low and let the chili simmer for 20-30 minutes, stirring occasionally, allowing the flavors to meld together. If the chili is too thick, you can add a little more broth or water to reach your desired consistency.
