Ingredients
  

1 pound ground beef

1 cup long-grain white rice, uncooked

2 cups beef broth

1/2 cup diced onion

1 cup diced bell pepper (any color)

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup frozen corn

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon cumin

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet over medium heat, brown the ground beef. Add diced onion and bell pepper, stirring until softened, about 5-7 minutes. Incorporate minced garlic and cook for an additional minute.

      Stir in chili powder, paprika, cumin, salt, and pepper, mixing well. Add the undrained diced tomatoes and corn, followed by the uncooked rice. Mix thoroughly.

        Pour in the beef broth and bring the mixture to a boil. Once boiling, remove from heat.

          In a greased 9x13 inch casserole dish, combine the beef mixture evenly.

            Sprinkle half of the shredded cheddar cheese over the mixture, then stir gently to combine everything.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

                After 30 minutes, remove the foil and sprinkle the remaining cheddar cheese on top. Bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Once finished, allow the casserole to sit for 5 minutes before serving. Garnish with fresh parsley before serving.
