Ingredients
  

1 lb diced ham (smoked or leftover)

1 cup dried white beans (such as navy or great northern)

1 medium onion, diced

2 carrots, peeled and chopped

2 celery stalks, chopped

4 cloves garlic, minced

6 cups low-sodium chicken broth

2 bay leaves

1 tsp dried thyme

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional for heat)

1 cup diced tomatoes (canned or fresh)

2 cups kale or spinach, chopped

Salt to taste

Fresh parsley for garnish

Instructions
 

Prepare the Beans: If using dried beans, rinse them under cold water and soak them in a large pot of water overnight. Drain and set aside. If using canned beans, you can skip this step.

    Sauté Vegetables: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5-7 minutes until they soften. Stir in the garlic and cook for an additional 1 minute.

      Combine Ingredients: Add the diced ham, soaked (or canned) beans, chicken broth, bay leaves, thyme, black pepper, cayenne pepper (if using), and diced tomatoes. Bring the mixture to a boil.

        Simmer: Reduce the heat to low and let the soup simmer for about 1.5 to 2 hours if using dried beans, or about 30 minutes if using canned beans. Stir occasionally to prevent sticking.

          Add Greens: During the last 15 minutes of cooking, stir in the chopped kale or spinach until wilted. Remove the bay leaves before serving.

            Adjust Seasoning: Taste the soup and add salt as needed.

              Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy warm with crusty bread if desired!
