2 ripe bananas, mashed

1 cup granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup walnuts, chopped

1/2 cup sour cream

1/2 cup heavy cream

2 tablespoons powdered sugar (for whipping)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the mashed bananas to the mixture, followed by the eggs and vanilla extract. Mix until combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

          Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Stir until just combined; do not overmix.

            Gently fold in the chopped walnuts.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                    While the cake is cooling, whip the heavy cream and powdered sugar in a chilled bowl until soft peaks form.

                      Once the cake is fully cooled, layer it with whipped cream, spreading it evenly on top and between the layers if making a multi-layered cake.

                        Decorate the top of the cake with additional chopped walnuts and banana slices for a beautiful finish.
