Ingredients
  

1 lb ground turkey or chicken

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 cups spinach, fresh or frozen

1 can (14 oz) crushed tomatoes

4 cups chicken or vegetable broth

1 tsp dried basil

1 tsp dried oregano

1 tsp red pepper flakes (optional)

1 cup whole wheat or protein-packed pasta shells or noodles

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Instructions
 

In a large pot over medium heat, add the ground turkey or chicken. Cook until browned, breaking it up with a spoon, about 5-7 minutes.

    Add the diced onion and red bell pepper to the pot and sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

      Pour in the crushed tomatoes and the chicken or vegetable broth. Stir to combine.

        Add the dried basil, dried oregano, and red pepper flakes if using. Season with salt and pepper to taste. Bring the mixture to a boil.

          Once boiling, reduce the heat to a simmer. Add the pasta and cook according to the package instructions, about 8-10 minutes, or until al dente.

            Stir in the fresh or frozen spinach and let it wilt in the soup.

              In a bowl, mix the ricotta cheese with a pinch of salt and pepper.

                Serve the soup hot, dolloping a generous spoonful of the ricotta mixture in each bowl and topping with shredded mozzarella cheese.

                  Garnish with fresh basil before serving.
