Ingredients
  

1 pre-made double pie crust

1 cup of shredded cheddar cheese

1 cup of cooked, crumbled bacon

1 cup of diced cooked potatoes

1 cup of chopped green onions

4 large eggs

1 cup of whole milk

1 tablespoon of Dijon mustard

Salt and pepper to taste

Optional: hot sauce for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    Roll out one pie crust and lay it in a 9-inch pie pan. Trim any excess and set aside.

      In a large bowl, combine the shredded cheddar cheese, cooked bacon, diced potatoes, and chopped green onions.

        In another bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper until well combined.

          Spread the cheese and bacon mixture evenly over the bottom of the prepared pie crust.

            Slowly pour the egg mixture over the top, ensuring it seeps into any gaps.

              Cover with the second pie crust, sealing the edges and cutting slits in the top crust for steam to escape.

                Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is set.

                  Allow to cool for about 10 minutes before slicing. Serve warm, with a splash of hot sauce if desired.
