1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

2 cups diced potatoes (about 2 medium potatoes)

1 cup frozen mixed vegetables (peas, corn, carrots)

1 can (15 oz) diced tomatoes, undrained

1 cup beef broth

1 tsp Worcestershire sauce

1 tsp paprika

½ tsp salt

½ tsp black pepper

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

      Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent.

        Combine Ingredients: To the beef mixture, add the diced potatoes, frozen mixed vegetables, diced tomatoes (with their juice), beef broth, Worcestershire sauce, paprika, salt, and pepper. Stir well to combine.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. This allows the potatoes to cook through and the flavors to meld beautifully.

              Add Cheese: After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top of the casserole. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
