1 lb ground beef

2 cups diced potatoes (about 4 medium potatoes)

1 cup diced onion

1 cup frozen corn (or fresh)

1 cup diced bell pepper (any color)

1 can (15 oz) diced tomatoes (with juice)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula. Drain any excess fat.

      Add the Vegetables: Stir in the diced onions, bell peppers, and garlic powder. Cook for about 5 minutes until the onions become translucent.

        Mix in Potatoes and Tomatoes: Add the diced potatoes and canned tomatoes (with juice) to the skillet. Season with onion powder, paprika, salt, and pepper. Stir well to combine.

          Transfer to Casserole Dish: Pour the beef and vegetable mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

            Cover and Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. This helps to cook the potatoes thoroughly.

              Add Cheese: After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly over the top. Return it to the oven uncovered and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
