Ingredients
  

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

4 medium potatoes, sliced thinly

2 cups frozen mixed vegetables (carrots, peas, corn)

1 can (12 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion turns translucent, about 3-4 minutes.

      Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        In a large mixing bowl, combine the sliced potatoes and frozen mixed vegetables. Add the cooked beef mixture, cream of mushroom soup, paprika, salt, and pepper. Mix everything until well combined.

          Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly and smooth out the top.

            Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

              After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly on top. Return to the oven, uncovered, and bake for an additional 15 minutes or until the cheese is bubbly and golden.

                Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley if desired and serve warm.
