3 ripe avocados

1 small red onion, finely chopped

2 ripe tomatoes, diced

1-2 green chilies (or jalapeños), finely minced

2 cloves garlic, minced

3 tablespoons adobo sauce (from canned chipotle peppers)

1 tablespoon lime juice

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Instructions
 

Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

    Use a fork or a potato masher to mash the avocados to your desired level of creaminess (smooth or chunky).

      Add the finely chopped red onion, diced tomatoes, minced chilies, and minced garlic to the bowl.

        Pour in the adobo sauce and lime juice. Stir gently to combine all the ingredients, being careful not to over-mix.

          Fold in the chopped cilantro and season with salt and pepper to taste.

            If desired, reserve some diced tomatoes and cilantro for garnish on top.

              Transfer the guacamole to a serving bowl and garnish with the reserved ingredients.
