1 cup creamy peanut butter

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups semi-sweet chocolate chips

2 tablespoons coconut oil (optional, for shine)

Instructions
 

In a mixing bowl, combine the creamy peanut butter and softened butter until smooth.

    Gradually add in the powdered sugar, mixing until fully combined.

      Stir in the vanilla extract and salt, taste, and adjust sugar or salt if needed.

        Chill the mixture in the refrigerator for about 30 minutes to firm up.

          Once chilled, use your hands to form the peanut butter mixture into egg-shaped ovals. Place them on a baking sheet lined with parchment paper.

            Freeze the peanut butter eggs for about 1 hour, or until they are solid.

              Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each until smooth. You can add coconut oil while melting to enhance shine and texture.

                Remove the eggs from the freezer and dip each one into the melted chocolate, ensuring they are fully coated.

                  Place the chocolate-covered eggs back on the parchment-lined baking sheet.

                    If desired, you can sprinkle some sea salt on top before the chocolate sets.

                      Chill the eggs in the fridge for an hour until the chocolate hardens completely.
