2 cups cooked jasmine rice (preferably day-old)

1 lb (450g) shrimp, peeled and deveined

2 tablespoons vegetable oil

3 cloves garlic, minced

1/2 onion, diced

1 cup mixed bell peppers (red, yellow, green), diced

1 cup frozen peas and carrots

2 eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for added depth)

2 green onions, chopped

Salt and pepper to taste

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (optional for heat)

Preparation of Shrimp: In a bowl, season the shrimp with salt, pepper, and red pepper flakes if using. Let it marinate for about 10 minutes.

    Heat Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and diced onion, stirring for about 1-2 minutes until fragrant.

      Cook Shrimp: Add the marinated shrimp to the skillet. Cook for about 2-3 minutes or until they turn pink and opaque. Remove the cooked shrimp from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the mixed bell peppers and frozen peas and carrots. Stir-fry for about 3-4 minutes until they are soft and heated through.

          Add Rice: Push the vegetables to the side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix with the vegetables. Add the cooked jasmine rice to the skillet, breaking up any clumps.

            Combine and Season: Add the cooked shrimp back to the skillet with the rice mixture. Pour in the soy sauce and oyster sauce, stirring everything together until well combined. Drizzle with sesame oil for added flavor. Taste and adjust seasoning with salt and pepper as needed.

              Finish with Green Onions: Stir in the chopped green onions and remove the skillet from heat.

                Serve Hot: Plate the fried rice, garnishing with extra green onion or a sprinkle of sesame seeds if desired.
