1 lb beef stew meat, cut into 1-inch pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, chopped

1 medium potato, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn (fresh, frozen, or canned)

2 cups diced tomatoes (canned or fresh)

6 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large soup pot, heat olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until the onions are translucent.

      Combine Ingredients: Return the browned beef to the pot. Add the diced potatoes, green beans, corn, and diced tomatoes. Pour in the beef broth.
