Ingredients

1.5 lbs pork tenderloin

1/3 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh thyme sprigs for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C).

In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, thyme, rosemary, salt, and pepper to create the marinade.

Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour (preferably overnight for more flavor).

Remove the pork tenderloin from the marinade and let it come to room temperature (about 15-20 minutes).

Heat a large oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until browned (about 3-4 minutes per side).

Pour the remaining marinade over the seared pork. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Remove the skillet from the oven and allow the pork to rest for 5-10 minutes before slicing.

Drizzle some of the pan sauce over sliced tenderloin and garnish with fresh thyme sprigs if desired. Serve warm.
