Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup honey

2 large eggs

1 teaspoon vanilla extract

1 cup finely chopped apple (about 1 medium apple)

½ cup sliced almonds

¼ cup brown sugar (for topping)

2 tablespoons butter (for topping)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In a large mixing bowl, beat the softened butter and honey together until the mixture is fluffy and well combined.

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Fold in the chopped apple and half of the sliced almonds into the cake batter gently.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

In a small bowl, combine the brown sugar and remaining sliced almonds with 2 tablespoons of butter until crumbly. Sprinkle this mixture evenly over the top of the cake batter.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely.
