Ingredients

1.5 lbs boneless, skinless chicken thighs

1/3 cup honey

3 cloves garlic, minced

1/4 cup soy sauce (low sodium recommended)

2 tablespoons rice vinegar

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper to taste

2 tablespoons vegetable oil (for frying)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

In a mixing bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil, and crushed red pepper flakes. This will be the marinade and sauce.

Season the chicken thighs with salt and pepper. Place the chicken in a resealable plastic bag or shallow dish and pour half of the marinade over the chicken. Reserve the other half for later. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (discarding the marinade in the bag) and add the chicken to the skillet.

Cook the chicken thighs for about 5-7 minutes on each side, or until the chicken is nicely browned and cooked through (internal temperature should reach 165°F / 75°C).

Once cooked, pour the reserved marinade over the chicken in the skillet, and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken.

Remove from heat and let it rest for a few minutes. Slice the chicken if desired and serve it topped with chopped green onions and a sprinkle of sesame seeds.
