1.5 lbs pork tenderloin

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Zest of 1 lemon

1 tablespoon soy sauce (optional for extra depth)

Prepare the Marinade: In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, rosemary, salt, black pepper, lemon juice, and lemon zest. If desired, add soy sauce for additional flavor.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is coated thoroughly. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for more flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade for later) and sear it in the skillet for about 2-3 minutes on each side until golden brown.

          Bake the Pork: Once seared, brush some of the reserved marinade over the top of the pork tenderloin. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest the Meat: Remove the skillet from the oven, cover the pork with aluminum foil, and let it rest for 5-10 minutes. This will allow the juices to redistribute for a more tender bite.

              Serve: Slice the pork tenderloin into medallions and drizzle with the remaining marinade from the skillet. Garnish with extra rosemary if desired.
