8 oz elbow macaroni

1 lb chicken breast, diced

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 cup honey

2 tbsp apple cider vinegar

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 cups milk (whole or 2%)

1/4 cup all-purpose flour

1 tbsp Dijon mustard

1/2 cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, season the diced chicken with salt, black pepper, and smoked paprika. Add chicken to the skillet and cook until browned and cooked through, about 7-8 minutes. Remove from heat.

      Make the Honey Pepper Sauce: In a small mixing bowl, whisk together honey and apple cider vinegar. Pour the sauce over the cooked chicken, tossing to coat evenly. Set aside.

        Prepare the Cheese Sauce: In a medium saucepan, heat milk over medium heat until warm (do not boil). In a separate bowl, whisk the flour with a bit of the warm milk to create a slurry. Gradually add the slurry back to the saucepan of warm milk while stirring continuously.

          Thicken the Sauce: Continue to cook the milk mixture on medium heat, stirring constantly until it thickens, about 5-7 minutes. Once thickened, reduce heat to low, and stir in the shredded cheddar cheese, Parmesan cheese, and Dijon mustard. Mix until the cheese is melted and the sauce is smooth.

            Combine: In the pot with the cooked macaroni, pour the cheese sauce over the pasta and mix well to ensure the pasta is evenly coated. Fold in the honey pepper chicken gently.

              Top and Bake: Preheat your oven to 375°F (190°C). Transfer the mac and cheese mixture to a greased baking dish. Sprinkle panko breadcrumbs evenly over the top. Bake for 20-25 minutes, or until the top is golden and crispy.
