Ingredients

4 salmon fillets (about 6 oz each)

1 cup fresh pineapple, chopped into small pieces

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions

In a medium bowl, combine the chopped pineapple, honey, soy sauce, grated ginger, minced garlic, olive oil, salt, and pepper. Stir well to mix the ingredients into a marinade.

Place the salmon fillets in a shallow dish and pour half of the marinade over them, ensuring they are well coated. Reserve the other half of the marinade for later use.

Cover the dish with plastic wrap and let the salmon marinate in the refrigerator for at least 30 minutes, allowing the flavors to absorb.

Preheat your grill or a grill pan over medium-high heat. If using a grill pan, lightly grease it with oil to prevent sticking.

Remove the salmon from the marinade and place it on the grill, skin side down. Grill for about 4-5 minutes, depending on the thickness of the fillets.

Gently flip the salmon over and grill for another 3-4 minutes, or until the salmon is fully cooked and flakes easily with a fork.

While the salmon is cooking, transfer the reserved marinade to a small saucepan and bring it to a boil over medium heat. Allow it to simmer for about 5 minutes or until slightly thickened.

Once cooked, remove the salmon from the grill and drizzle the thickened marinade over the top.

Serve the salmon hot, garnished with fresh cilantro and additional pineapple pieces if desired.
