1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup mayonnaise

1/4 cup honey

1 tablespoon sweetened condensed milk

1 teaspoon lemon juice

1 teaspoon sesame oil

Salt and pepper to taste

Oil for frying

2 green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Prepare the Walnuts: In a small pot of boiling water, blanch the walnuts for 1-2 minutes. Drain and immediately transfer them to cold water to stop the cooking process. Once cooled, drain them again. In a skillet over medium heat, add a tablespoon of oil and toast the walnuts until golden brown and fragrant. Set aside.

    Make the Sauce: In a medium bowl, whisk together mayonnaise, honey, sweetened condensed milk, lemon juice, and sesame oil until smooth and creamy. Adjust seasoning with a pinch of salt if needed, then set the sauce aside.

      Coat the Shrimp: In a separate bowl, season the shrimp with salt and pepper. Dredge each shrimp in cornstarch, shaking off any excess to ensure an even coating.

        Fry the Shrimp: In a deep skillet or frying pan, heat enough oil (about 2 inches) over medium-high heat until it reaches 350°F (175°C). Carefully add the coated shrimp in batches, frying them for about 2-3 minutes or until they turn golden and are cooked through. Remove the shrimp and place them on a paper towel to drain excess oil.

          Combine: In a large mixing bowl, gently toss the fried shrimp with the prepared sauce until they are well-coated. Add the toasted walnuts and mix until evenly distributed.

            Serve: Transfer the shrimp onto a serving platter. Garnish with chopped green onions and a sprinkle of sesame seeds if desired.
