Ingredients
  

1 cup long-grain white rice

4 cups water (divided)

1 cup milk (whole or plant-based)

1/2 cup strong brewed coffee (cooled)

1/3 cup sugar (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

Ice cubes (for serving)

Cinnamon sticks (for garnish, optional)

Instructions
 

Rinse the rice under cold water until the water runs clear, to remove excess starch. This helps create a smoother horchata.

    In a blender, combine the rinsed rice and 2 cups of water. Blend on high speed until the rice is mostly ground, about 30-45 seconds.

      Pour the rice mixture into a bowl and add an additional 2 cups of water. Let it soak for at least 4 hours, or overnight in the fridge for best flavor.

        After soaking, blend the rice-water mixture once more for a few seconds to ensure it's well mixed.

          Strain the mixture through a fine-mesh sieve or cheesecloth into a large bowl or pitcher, discarding the solids.

            Stir in the milk, brewed coffee, sugar, vanilla extract, cinnamon, and salt until combined. Adjust the sweetness if desired.

              Chill the horchata de café in the refrigerator for about 1 hour before serving.

                Serve over ice, garnished with a sprinkle of cinnamon or a cinnamon stick, if desired.
