1 lb boneless, skinless chicken thighs

1 cup cooked jasmine rice

1 cup broccoli florets

1 red bell pepper, sliced

1 cup shredded carrots

3 tablespoons hot honey (store-bought or homemade)

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon ginger, grated

2 tablespoons olive oil

2 teaspoons sesame oil

Salt and pepper, to taste

Sesame seeds, for garnish

Green onions, chopped, for garnish

Instructions
 

Marinate the Chicken: In a bowl, mix hot honey, soy sauce, minced garlic, and grated ginger. Add chicken thighs, ensuring they are well coated in the marinade. Let marinate for at least 30 minutes or up to 2 hours in the fridge for more flavor.

    Cook the Rice: Prepare the jasmine rice according to package instructions. Once cooked, fluff with a fork and set aside.

      Prepare the Vegetables: In a large skillet, heat olive oil over medium heat. Add broccoli florets and sliced bell pepper. Sauté for about 4-5 minutes until they begin to soften. Add shredded carrots and continue cooking for another 2 minutes until all vegetables are tender yet crisp. Season with salt and pepper to taste. Remove from the skillet and set aside.

        Cook the Chicken: In the same skillet, add sesame oil over medium-high heat. Remove the marinated chicken from the bowl (reserve the marinade) and cook for about 5-7 minutes, turning occasionally until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

          Glaze the Chicken: Pour the reserved marinade into the skillet with the cooked chicken and let it bubble for 2-3 minutes until it thickens slightly, coating the chicken in a sweet and spicy glaze.

            Assemble the Bowls: Place a scoop of jasmine rice at the bottom of each bowl. Top with a portion of the sautéed vegetables and sliced hot honey chicken. Drizzle extra hot honey over the top if desired.
