1/2 cup fresh cilantro, tightly packed

1/4 cup fresh oregano leaves (or 1 tablespoon dried oregano)

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup extra-virgin olive oil

2 tablespoons red wine vinegar (or lemon juice for a non-vinegar option)

Begin by thoroughly washing the parsley, cilantro, and oregano under cold water. Pat them dry with a kitchen towel to remove excess moisture.
