Butter Chicken, or “Murgh Makhani” as it is known in its native land, holds a special place in the hearts (and stomachs) of many. Originating from the rich culinary landscape of North India, particularly Punjab, this dish is a testament to the region's vibrant food culture. It is not just a meal; it is a celebration of flavors that reflects the warmth and hospitality of Indian culture. Butter Chicken was created in the 1950s at the Moti Mahal restaurant in Delhi, where leftover chicken was cooked in a tomato gravy along with butter and cream, resulting in a dish that was both luxurious and approachable.

Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon salt

3 tablespoons vegetable oil

1 medium onion, finely chopped

4 garlic cloves, minced

1 tablespoon ginger, minced

1 can (400g) crushed tomatoes

1 teaspoon sugar

1 cup heavy cream

4 tablespoons butter

Fresh cilantro, for garnish

Cooked basmati rice, for serving

Instructions

In a large bowl, combine the chicken, yogurt, lemon juice, garam masala, turmeric, red chili powder, and salt. Mix well, cover, and marinate for at least 1 hour (or overnight for best results) in the refrigerator.

Heat vegetable oil in a large skillet over medium heat. Add the chopped onions and sauté until golden brown.

Stir in the minced garlic and ginger, cooking for another minute until fragrant.

Add the marinated chicken to the skillet, cooking until the chicken is browned on all sides, about 5-7 minutes.

Pour in the crushed tomatoes and sugar, stirring to combine. Allow the mixture to simmer for about 10 minutes, until the chicken is fully cooked through.

Reduce the heat to low and stir in the heavy cream and butter, allowing it to melt and create a creamy sauce. Simmer for an additional 5 minutes.

Taste and adjust seasoning if necessary. Garnish with freshly chopped cilantro before serving.

Serve hot with basmati rice and enjoy the rich, aromatic flavors!
