1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed pineapple, drained

1 teaspoon gelatin (optional, for setting)

¼ cup shredded coconut (optional)

Prepare the Crust: In a medium bowl, mix the crushed graham crackers and melted butter until evenly combined. Press the mixture firmly into the bottom of individual serving cups or mini springform pans to form the crust. Chill in the refrigerator while preparing the filling.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese using a hand mixer or stand mixer until smooth. Gradually add the powdered sugar, mixing until fully incorporated.
