Ingredients
  

4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup spinach, fresh or baby

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

Juice of 1 lemon

Fresh basil, for garnish

Instructions
 

Prepare the Salmon: Season both sides of the salmon fillets with salt and pepper.

    Sear the Salmon: In a large skillet over medium-high heat, add olive oil. Once hot, add the salmon fillets. Sear for 4-5 minutes on each side or until cooked to your liking. Remove from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped sun-dried tomatoes and spinach, cooking until the spinach wilts (about 1-2 minutes).

        Add Cream and Cheese: Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan, Italian seasoning, and red pepper flakes (if using). Stir until the cheese has melted and the sauce thickens slightly.

          Finish with Lemon: Squeeze the lemon juice into the sauce and stir well. Taste and adjust seasoning if necessary.

            Combine with Salmon: Place the seared salmon back into the skillet, spooning sauce over each fillet. Let it simmer for an additional 2-3 minutes to heat through.
