1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain rice (like Jasmine or Basmati)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

2 tablespoons chopped fresh parsley (for garnish)

Sauté Chicken: Turn on the Instant Pot and select the 'Sauté' function. Add the olive oil and allow it to heat. Once hot, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent.

    Brown Chicken: Add the chicken pieces to the pot. Sprinkle with salt, pepper, thyme, and smoked paprika. Cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned.

      Add Rice and Broth: Add the rice to the pot, stirring to combine everything. Pour in the chicken broth and ensure all the rice is submerged in the liquid.

        Incorporate Vegetables: Fold in the frozen mixed vegetables for added color and nutrition.

          Pressure Cook: Close the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high pressure for 10 minutes. Once done, allow a natural pressure release for 5 minutes before manually releasing any remaining pressure.
