Ingredients
  

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth (low sodium preferred)

1 cup heavy cream

2 cups fresh spinach, packed

1 cup cherry tomatoes, halved

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional for extra heat)

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (plus extra for garnish)

2 tbsp olive oil

Fresh basil leaves, for garnish (optional)

Instructions
 

Sauté the Sausage: Set your Instant Pot to the sauté function. Add olive oil and the Italian sausage. Cook until browned and crumbled, about 5-7 minutes. During the last couple of minutes, add the diced onion and minced garlic and sauté until the onion is translucent.

    Add Broth and Spices: Pour in the chicken broth, then add the dried oregano, dried basil, red pepper flakes, and season with salt and pepper. Stir well to combine everything.

      Pressure Cook: Close the lid of the Instant Pot and set it to high pressure for 10 minutes. Make sure the valve is set to sealing.

        Release Pressure: After the cooking time is complete, allow for a natural pressure release for about 5 minutes, then manually release any remaining pressure.

          Stir in Cream and Spinach: Open the lid carefully. Stir in the heavy cream, fresh spinach, and halved cherry tomatoes. Allow the residual heat to wilt the spinach (about 2-3 minutes).

            Add Cheese: Finally, stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with more salt and pepper if needed.

              Serve: Ladle the soup into bowls, garnish with extra Parmesan cheese and fresh basil leaves if desired.
