8 oz elbow macaroni

1 can (15 oz) pumpkin puree

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup vegetable broth

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cinnamon

½ teaspoon nutmeg

Salt and pepper to taste

2 tablespoons butter

¼ cup grated Parmesan cheese (for topping)

Start by adding the elbow macaroni, pumpkin puree, vegetable broth, and milk to the Instant Pot. Stir to combine everything evenly.

    Sprinkle in the garlic powder, onion powder, ground cinnamon, nutmeg, and a pinch of salt and pepper. Mix well.

      Close the lid of the Instant Pot, ensuring the vent is set to sealing. Select the “Manual” or “Pressure Cook” setting and cook for 4 minutes at high pressure.

        Once cooking time is complete, do a quick release of the pressure by turning the vent to venting. Carefully remove the lid.

          Stir in the butter, sharp cheddar cheese, and mozzarella cheese until melted and creamy.

            Taste and adjust the seasoning with more salt and pepper if needed.

              If desired, top with grated Parmesan cheese and mix well to incorporate.
